Protein Packed Greek Tuna Salad
Are you looking for a light and refreshing lunch that you can pull together in no time? Need more protein variety? You are going to love this budget friendly Greek tuna salad. It’s great for a quick lunch at home, on the run or to put in containers and take to the office. Often times, I have a working lunch at home and I love that this can be pulled together for a healthful option with ingredients you usually have on hand. If you are on the go, you could roll it in a tortilla or pita pocket and eat in your car....not that I have ever done that or anything... just saying...
Unlike traditional tuna salads that are largely egg and mayonnaise based, this one contains fresh tomatoes, fiber rich chick peas, red onion, detoxifying cucumber, salty kalamata olives, parsley, vitamin rich avocado (even more fiber) and fresh squeezed lemon (a natural diuretic) topped off with a little Greek vinaigrette. It’s just so so yummy y’all! I know you will love it as much as I do!
RECIPE
2 cans of tuna in water (drain & rinse)
1 large tomato diced or handful of cherry or grape tomatoes
1 can chick peas or garbanzo beans (rinsed & drained)
1/4 cup diced red onion
1/2 large cucumber diced
1/4 cup kalamata olives chopped
1 diced avocado
juice of one lemon
1 T finely chopped parsley
3-4 T Greek vinaigrette*
Mix ingredients. Serve immediately or cover and refrigerate.
*I am not brand loyal to a particular vinaigrette. My pantry is well stocked in dressings and I use what’s available at the time. I’m sure a balsamic vinaigrette would taste just as delightful.
